Avocados are high in fiber (soluble and insoluble) and have more potassium than bananas. Though naturally abundant in fat, avocados contain mainly monounsaturated fats, which raise HDL, or “good” cholesterol, levels. Add more grapefruit juice or lime juice if the dressing is too thick. The acidity in these juices prevents the avocado from turning brown.

AVOCADO, GRAPEFRUIT, AND CHIPOTLE Dressing

MAKES 1¾ CUPS (435 ML)

1 ripe avocado, cut into chunks

⅔ cup (185 ml) freshly squeezed grapefruit juice

¼ cup (60 ml) freshly squeezed lime juice

2 tablespoons (30 ml) chopped green onion, including white part

2 tablespoons (30 ml) maple syrup

1 small clove garlic, chopped

½ teaspoon (2 ml) chopped chipotle chile

¼ teaspoon (1 ml) salt

Put all the ingredients in a blender and process for 30 seconds, or until smooth. Stored in a sealed container in the refrigerator, Avocado, Grapefruit, and Chipotle Dressing will keep for 3 to 4 days.
